Hugh not in his father’s household in 1851.
Possibly married a Janet (Mackenzie?) (b.Perth) and moved to Glasgow, based on 1861 census.
Except that Scotlandspeople has no 1861 census entries to match the ones that Ancestry has in their 1861 index.
Possibly married Flora CAMPBELL, 20 Sep 1872, in Glasgow, Lanark. But that is a very late marriage. Possibly went to New Zealand?
A Hugh WINTON died in 1884 in Mount Cook, West Coast, New Zealand.
The NZ BMD website has a Hugh Winton, died 1884, age 62. Reg#2915. That would make his birth year ca. 1822. Also at

Found a Hugh Winton Findagrave MEMORIAL ID 166459137, dated 1884. Pleasant Point, Timaru District, Canterbury, New Zealand
But a Hugh Winton, tailor, is in the 1885-86 NZ Post Office Directory for Fairlie Creek, Canterbury (perhaps based on 1884 data).
An H. Winton, arrived in Aukland, from Sydney, in 1888.
A Hugh & Flora Winton had a child, Marion, born in 1876 in NZ.
