Given the date of death and age shown on the gravestone, she was born Oct. 14, 1879 (unless there was a number of days in the age that is not visible in the photograph). The 1880 census states that she was born in September of 1879. If she was born Sep. 23, 1879, then her age would have been 4 years, 11 months, 22 days. In any case it appears that 1879 is the correct year.
